This cutting board is expertly crafted from premium Tono Japanese cypress, renowned for its exceptional quality. For many years, hinoki has been regarded as the finest choice for cutting boards, especially among sushi chefs who appreciate its unique properties. Artisans meticulously apply a smoothing plane as a final touch, followed by sanding for additional refinement. This process results in a uniquely polished surface that enhances the board’s natural wood grain without compromising its beauty.
The gentle nature of the cypress bark provides a friendly relationship with your knife, prolonging its sharpness and overall lifespan. Compared to other materials, this cutting board significantly reduces fatigue in your hands during food preparation, allowing for a more enjoyable cooking experience.
1. Before Using the Board:
You might observe some oiliness, known as resin, on the surface or shrink wrap of the board. This resin is characteristic of conifers and contains hinokitiol, a natural substance. Its presence indicates that the wood has been preserved from drying out. Please rest assured that this is safe and has no impact on food hygiene.
2. Every Time You Use It:
Prior to use, lightly soak the board in water. This moisture helps prevent food odors, stains, and black spots from adhering to the surface.
3. After Each Use:
Clean the board by scrubbing it in the direction of the grain with a brush. Wipe it down with a cloth, and then let it dry in a shaded, well-ventilated area.
While a dishwasher can be used for cleaning, it’s crucial to rinse the board thoroughly afterward. Avoid using bleach, as it can damage the wood and result in a rough surface. To sterilize the board post-cleaning and prevent discoloration, pouring boiling water can be effective. Remember to rinse the board with water and soap, particularly after cutting fish or meat, since hardened proteins may lead to unpleasant odors. Exercise caution when dealing with boiling water.
Over time, the wooden cutting board may warp. If this occurs, place the convex side face up and lay a wet cloth over it. Apply a heavy weight (around 22 pounds) to the board, leaving it in this position for half a day to help restore its shape.
